Do I have to register a SIM here?

Local SIM-registration rules apply to buying a SIM in the country. A travel eSIM is a foreign profile roaming onto the local network, so you are not registering anything locally and there is no counter to queue at.

What actually catches people out

Whether Google, WhatsApp and Instagram work depends entirely on how a plan routes its traffic. Any eSIM that connects over a Chinese domestic network is filtered exactly like a local SIM — the eSIM itself is not a way around the firewall. Install and test a VPN before you fly, because VPN sites and app-store listings are blocked once you are inside the country.
